What it is

Пшеничная крупа — cracked durum wheat — is one of the oldest grains in Russian and Ukrainian kitchens, the everyday cousin of bulgur (similar grain, just not parboiled before drying). Cooks into a thick, golden porridge or holds its shape as a side; mild wheat flavour goes equally well with butter, mushrooms, meat or a splash of milk and a spoonful of sugar. The "Selected" / отборная grade means the kernels are checked for uniform size and cleaned to a higher standard.

Loose-pack 650 g format from Uvelka — the long-running Chelyabinsk-region grain house — for cooks who prefer to measure their own portions or cook a bigger batch at once.

How to cook

Porridge / side: rinse the grain in cold water. Combine 1 part wheat to 2 parts liquid (water for savoury, milk-and-water for breakfast porridge), add a pinch of salt, bring to a boil and simmer covered on the lowest heat for about 20–25 minutes, until the liquid is absorbed. Take off the heat, leave covered for 5–10 minutes, then fluff and stir in a generous knob of butter.

Pilaf-style: sauté chopped onion and grated carrot in oil until soft, add the dry grain and stir for a minute, then pour in hot stock (1 part wheat to 2 parts stock), season, cover and simmer until tender. A great base for stews and roast meat.
