What it is

Canned cod liver is the liver of Atlantic cod, preserved in its naturally rendered oil. The liver has a soft, almost spreadable texture with a rich, clean flavour — distinctly fishy but not pungent.

A traditional Eastern European and Scandinavian preserve, it is eaten cold, straight from the tin — on a slice of rye bread, with boiled potatoes, or as a filling for blini and tartlets.
