What it is

Polished proso millet — the bright-yellow grain at the heart of пшённая каша, the classic Russian millet porridge. The "selective" (отборное) grade means the grains are checked for uniform size and colour: clean kernels, no broken or dark seeds, ready to cook into a fluffy, slightly buttery-tasting porridge or a sturdy grain side.

Packed by Uvelka, the long-running Chelyabinsk-region grain house whose pale-yellow box is a fixture in Russian and Eastern European pantries. Naturally gluten-free, an old, honest grain that holds its shape well and takes happily to both sweet and savoury treatments.


How to cook

Rinse first — millet has bitterness in the husk dust, so swirl the grain in a sieve under cold water until the water runs almost clear, then once briefly with hot water from the kettle. Combine 1 part millet to 2.5 parts liquid (water for savoury, milk-and-water for breakfast porridge) in a heavy pot, add a pinch of salt, bring to a boil and simmer covered on the lowest heat for about 20 minutes, until the liquid is absorbed. Take off the heat, leave covered for 10 minutes, then fluff and stir in a generous knob of butter — and a spoonful of sugar or jam if you're going sweet.

Store in a cool, dry place. Keep the pack sealed once opened. Shelf life approximately 18 months from the date on the box. Millet's natural oils mean it goes rancid faster than wheat or rice — buy what you'll cook through within a few months and store airtight.
