What it is
Whole buckwheat groats — ядрица — from Uvelka, the long-running Chelyabinsk-region grain house whose pack is a fixture in Russian and Eastern European pantries. The 800 g loose pack of "selected" / отборная grain — kernels checked for uniform size and cleanness, the same grain you'll find in their popular cook-in-bag boxes, just in larger free-pour format.
This is the everyday Eastern European foundation grain: deep toasty flavour, slow-burning energy, naturally gluten-free, and as much at home in a breakfast porridge with butter and milk as it is in a savoury side under braised meat or in stuffed cabbage.
How to cook
Rinse the grain under cold water. Combine 1 part buckwheat to 2 parts water in a heavy pot, add a pinch of salt, bring to a boil, then cover and simmer on the lowest heat for about 15 minutes, until the water is fully absorbed. Take off the heat and leave covered for 5–10 minutes — this is what makes the grain fluff up properly. Stir in a generous knob of butter and serve.

Store in a cool, dry place. Once opened, transfer to an airtight jar. Shelf life approximately 18 months from the date on the pack.
