What it is
Whole buckwheat groats — ядрица — premium grade, from Ukrainian brand Zhitnica («Житница», meaning "granary"). Same kilned brown grain that's the everyday foundation of Russian, Ukrainian and Belarusian cooking — the porridge eaten with butter and milk for breakfast, the side dish under braised meat, the base of countless winter stews.
One characteristic worth flagging: this grain has a notably high dietary fibre value (10 g per 100 g) — roughly twice some competitor brands. Naturally gluten-free, slow-burning energy, deeply nostalgic toasty flavour.
How to cook
Rinse the grain under cold water. Combine 1 part buckwheat to 2 parts water in a heavy pot, add a pinch of salt, bring to a boil, then cover and simmer on the lowest heat for about 10–15 minutes, until the water is fully absorbed. Take off the heat and leave covered for 5–10 minutes — this is what makes the grain fluff up properly. Stir in a generous knob of butter and serve.
