Bila Tserkva — Buckwheat «Osobennaya» (Особенная)
The premium grade of Ukrainian buckwheat — bigger kernels, cleaner trim, the trophy badge to match.
UKRAINE · BILA TSERKVA · 1 kg
What it is
Whole buckwheat groats — ядрица — from the same Bila Tserkva grain mill (ТОВ «Білоцерківхлібопродукт») as our regular B.K. buckwheat, but in the higher-grade «Особенная» ("special") trim. Larger, more uniform kernels; cleaner sift; the line that carries the maker's "International Trophy for Quality" badge — basically the upgrade pick from the same producer.
Same toasty Russian/Ukrainian buckwheat flavour you grew up on, but every spoonful looks like the picture on the box. Naturally gluten-free, slow-burning energy, the everyday foundation grain of Eastern European cooking.
How to cook
Rinse the grain under cold water. Combine 1 part buckwheat to 2 parts water in a heavy pot, add a pinch of salt, bring to a boil, then cover and simmer on the lowest heat for about 15 minutes, until the water is fully absorbed. Take off the heat and leave covered for 5–10 minutes — this is what makes the grain fluff up properly. Stir in a generous knob of butter and serve.
