What it is
Serve cold alongside boiled potatoes, smoked meat, or rye bread and butter. Chopped into a quick salad with spring onion and sunflower oil, they make a bright, earthy side. These tomatoes are at their best cold, straight from the jar.
Dachnye barrel tomatoes are prepared by the classic bochkovye method: whole ripe tomatoes packed in salted brine with dill, garlic, and bay leaf, then left to ferment naturally without any vinegar. Lactic acid develops slowly, giving the tomatoes their characteristic tang and savoury depth that vinegar-pickled versions cannot replicate.
