What it is
Barrel cucumbers are one of the great constants of Russian preserving. Whole cucumbers are packed into brine with dill, garlic, horseradish and a scattering of aromatic leaves, then left to ferment slowly — no vinegar, no shortcuts. The sourness is entirely the work of lactic fermentation, which gives the brine its cloudy depth and the cucumber its characteristic soft crunch. Teshchiny Recepty jars this tradition in a 650 ml format: just enough for a full plate on the table.
