What it is
Svalia is one of the best-known dairy names in Lithuania, made by Pieno Žvaigždės. The 30% sour cream is properly thick — a spoon stands up in it — and finishes with the gentle tang of slow-set lactic culture rather than added acid.
Stir a spoonful into borshch or solyanka, fold it into vareniki and dumplings, pile it onto baked potatoes, or use it as the binder for a creamy beetroot, herring or mushroom salad. It also works as a quick dessert with berries and a drizzle of honey.
