What it is
River lamprey (nēģis in Latvian, Lampetra fluviatilis) is a traditional Baltic delicacy, caught in Latvian rivers each autumn. TILAUDI fries these slender, jawless fish to a golden finish and packs them in their own juices — preserving the tender texture and distinctive rich flavour that have made Latvian lamprey a regional staple for centuries.
The town of Carnikava on the Gulf of Riga is particularly renowned for its lamprey catch. Serve chilled as a starter with dark rye bread and mustard, or as part of a cold appetiser spread.
