What it is
Bird's Milk (Ptichye Moloko) confections are a cherished Russian sweet — each piece a pillow of light, whipped soufflé built on an agar-agar base, delicately flavoured with vanilla cream and enrobed in a thin chocolate shell.
The recipe took shape in Soviet confectionery in the 1960s and has barely changed since: the same airiness, the same gentle sweetness, the same clean snap of chocolate when you bite in.
