What it is
Premium wild-game charcuterie from RGK (Rēzeknes gaļas kombināts), one of Latvia's oldest meat houses. Lean elk meat is salt-cured, rested with spices and slowly smoke-dried over alder and beech wood, then shaved into wafer-thin slices — deep ruby colour, a faint matte rim of fat, and that unmistakable wild-game perfume. The flavour is concentrated and properly «foresty»: noble game, walnut, warm woodsmoke and a long, clean finish. Pair with a glass of red, a dark beer or a cranberry tincture; lay it on dark rye with mustard, or add to a cheese board alongside hard aged cheeses and pickled gherkins. Ready to eat — just open the vacuum pack and let the meat breathe for a couple of minutes.
