What it is
Pork ribs cured and hot-smoked in the Eastern-European tradition — meaty, lightly salted, with a deep woodsmoke aroma and a mahogany finish on the bone. They are fully cooked, so no further preparation is required: open the pack, slice between the bones and serve.
Eat them cold as a snack with rye bread, mustard and a cold beer; or warm them through in a hot oven (160°C, 10–15 minutes) to soften the fat and lift the smoke. They are also the secret weapon of a proper pea soup, solyanka or cabbage shchi — one or two ribs simmered in the broth turn an everyday pot into something memorable.
