What it is
Smoked venison from Rēzekne Meat Factory (RGK) — a premium wild‑game charcuterie made in the Latgalian tradition. Lean, ruby‑dark deer meat is cured with salt and spices, rested, then slowly smoked over smouldering alder and beech until it takes on a deep, foresty aroma and a firm, gently springy bite. The slices show even crimson flesh, almost no marbling; the flavour is delicate and faintly woodsy, with a long, clean woodsmoke finish.
The vacuum‑packed slices are ready to serve straight from the fridge: fan them out on a board with lingonberry sauce and tiny pickles, fold them into a cheese plate with hard aged cheeses, or pile them onto dark rye with mustard and a small glass of chilled balšams. In salads, venison pairs beautifully with pear, walnut and rocket; on hot dishes, lay a few slices on top of pasta or risotto just before serving — the meat releases a warm, smoky backbone without overwhelming the plate.
