What it is
Whole pork tongue, brined and slow-smoked by Rokiskio Mesne — the long-established Lithuanian smokehouse in the north-eastern town of Rokiskis. The tongue is trimmed, cured with salt and a measured blend of spices, then hot-smoked until the outer surface darkens to a warm copper and the meat inside turns tender, dense and silky. It is finished and vacuum-sealed in one piece, ready to slice.
This is a cold-cuts classic of the Baltic and Slavic table: thin slices on dark rye with mustard or fresh horseradish, a few rings of pickled onion alongside, perhaps a little aspic. The flavour is gentle — clean pork, light salt, a quiet whisper of smoke — and the texture is firm but yielding, never rubbery. Serve cold straight from the fridge for the best clean cut.
