What it is
Hot-smoked pork ears, pre-sliced into thin strips and ready to eat. A signature deli-counter snack of the Eastern-European tradition: a fine ribbon of soft cartilage trimmed with meaty edge and skin, cured and slowly smoked over wood until it picks up that springy, lightly chewy bite and a rich, savoury smoke aroma. No cooking needed — open the pack and tip onto a plate.
The classic pairing is a cold beer and a pinch of coarse salt; they are equally good with sharp mustard, pickled onions, rye bread and a measure of something strong.
