What it is
Sea perch ( Sebastes sp.) is a flavourful, low-fat fish with dense white meat and few bones. Each piece is already gutted and trimmed of its head, making prep minimal and straightforward.
Thaw overnight in the refrigerator. Rinse under cold water, pat dry, and cook. Bake in foil at 180 °C for 20–25 minutes, pan-fry in butter with garlic and herbs, or steam with lemon and black pepper.
