What it is
Smelt (Osmerus eperlanus) is a small, silvery sea fish prized in Russian and Baltic culinary tradition. Whole fish are salted and slow-dried until firm and intensely flavoured — the result is a compact, protein-rich snack that pairs naturally with cold beer or dark rye bread.
