What Is Vimba?
Vimba (Vimba vimba), also called vimba bream or zanthe, is a lean freshwater fish native to the rivers and lakes of Eastern Europe and the Baltic watershed. Prized for its firm white flesh, it stands at the heart of the Eastern European dried fish tradition. The name rybets is well known across Russia and the Baltics as a benchmark for quality dried river fish.
How It Is Made
Whole fish are salted and air-dried over several days. This firms the flesh, concentrates its natural savouriness, and gives the skin a characteristic golden-brown colour. Peel it back to find firm, layered flesh with a clean, pleasantly salty finish. No additives, no preservatives.
