What it is
Bream is prized across Eastern Europe for its lean, dense flesh that takes well to salt-curing. Whole fish are cleaned, salted, then hung to air-dry in cool, ventilated conditions until moisture drops and flavour concentrates. The result is a firm, intensely savoury fish with a characteristic amber sheen on the skin.

How to enjoy
Pull apart into strips by hand. Serve cold alongside a dark lager or wheat beer. Pairs well with rye bread and pickles. Also good shredded into small pieces as a salad topping or stirred into warm buckwheat.
