What it is
RGK Classic Cervelat is a semi-dried smoked sausage made by Rēzeknes Gaļas Kombināts — one of Latvia's leading meat producers, based in the Latgale region. The recipe follows the traditional cervelat format: pork and pork fat form the backbone, gently seasoned and cold-smoked to develop a characteristic deep colour and mild, savoury aroma.
Firm and sliceable, it holds its shape cleanly. Best served thinly sliced on a cold platter, on rye bread, or alongside pickled vegetables.
