What it is
Servelat Moskovskij is a classic Moscow-style cervelat: a coarsely chopped beef and pork sausage with visible cubes of back fat, cured and lightly smoked. The texture is dense, the slice deep pink with a marbled mosaic, and the flavour reads as smoky and faintly peppery — a staple of the cold cut tray since Soviet times.
Produced by Lackmann Fleisch- und Feinkostfabrik in Willstätt, Germany. Lackmann has been making Eastern European-style sausages for the German market since the 1990s and is one of the more reliably accurate names for this style outside the former USSR.
