What it is
Servelat is one of the cornerstone sausages of the Eastern European charcuterie tradition — a finely-emulsified blend of pork and beef, gently cured, then cooked and cold-smoked over hardwood until the casing takes on a deep amber colour and a clean, woodsmoke aroma.
The Germes «Kremlinoff» recipe leans towards the classic Latvian school: a tight, sliceable crumb, a measured smokiness that does not overpower, and a backbone of black pepper, nutmeg and garlic that has stayed largely unchanged for decades. Cut a few thin slices onto dark rye, add a smear of mustard, and you have a snack that needs nothing else.
