What it is
Ratatouille from Nizhyn is a classic Ukrainian-style spiced vegetable preparation made from freshly harvested peppers, courgette, aubergine, onion and carrot, slow-cooked with tomato paste, sunflower oil and garlic. No artificial preservatives — just vegetables, salt, a touch of sugar and citric acid. Comes in a 450 g glass jar, shelf-stable for up to 3 years. Serve as a side dish, a topping for bread, or stir through pasta or grain.
