What it is
Sumakh is the ground dried berry of Rhus coriaria , a shrub native to the eastern Mediterranean and Caucasus. It has a deep burgundy colour and delivers a sharp, citrusy tang without the acidity of lemon juice. In Georgian, Armenian, and Middle Eastern kitchens it is sprinkled over grilled meats, stirred into sauces, and scattered across rice dishes.
