What it is
Kharchos suneli is a classic Georgian spice blend crafted specifically for kharcho — the rich, deeply flavoured beef and walnut soup that defines Georgian cooking. The Mimino blend combines sun-dried coriander, blue fenugreek (utskho suneli), summer savory (kondari), dill, marigold petals, paprika, and dried chilli into a cohesive, earthy seasoning that delivers the characteristic warmth and herbal depth of the Georgian pot.
Stir 1–2 teaspoons into the broth in the final 10–15 minutes of cooking to keep the herbal notes bright. Also works well in lamb stews, braised chicken, and slow-cooked bean dishes.
