What it is
Svan salt (სვანური მარილი) is a centuries-old seasoning from the remote mountain villages of Svaneti in north-western Georgia. Coarse sea salt is combined with fresh garlic, coriander, blue fenugreek (utskho-suneli), dill, parsley, marigold petals, caraway, and chilli — a moist, intensely aromatic blend that replaces a whole spice rack. The salt crystals absorb the essential oils of the herbs, concentrating the flavour so that a single pinch does the work of several ingredients.
Use instead of plain salt on grilled meats, roasted vegetables, soups, and stews. Rub into chicken or lamb before roasting; stir a pinch into scrambled eggs or sour cream dips. Use sparingly — the garlic and herb intensity is considerably higher than regular table salt. Store sealed, away from moisture and direct sunlight.
