What it is
Khmeli suneli — literally 'dried spice' in Georgian — is the foundational seasoning of the Georgian kitchen. This classic blend of blue fenugreek, coriander, dried marigold petals, basil, dill, parsley, summer savory, bay leaf and mint forms a warm, aromatic powder that defines the flavour of kharcho, satsivi and countless everyday dishes.
Add to meat stews, bean soups, poultry marinades and vegetable dishes. A teaspoon stirred into a walnut sauce transforms it instantly. Works well with lamb, chicken and beef; a pinch rounds off aubergine dishes and cold appetisers.
