What it is
Кабачковая икра — marrow caviar — is one of the most beloved preserved spreads across Russia and Eastern Europe. Emelya's version with garlic follows the classic preparation: tender marrow (courgette) is cooked down with carrot, onion and tomato paste until thick and smooth, then finished with garlic for a savoury depth that keeps it interesting right to the last spoonful. Ready straight from the jar, it spreads effortlessly on rye or white bread and works equally well as a side with meat or a filling for blini.
