What it is

Korejka (корейка) is the lean pork loin cut. Lackmann's version is cured with fresh garlic worked into the meat, then hot-smoked — quicker than cold smoking, leaving the meat fully cooked, tender, rosy inside and aromatic on the outside.

Lackmann is a Germany-based producer specialising in Eastern-European deli and grocery for the export market. Slice this loin thin for sandwiches, lay generously on dark rye with mustard, or warm gently and serve with mashed potato and pickles.
