What it is
The traditional Riga-style dark rye loaf — dense, moist, made with naturally-fermented rye sourdough and finished with whole caraway seeds. The crumb is deep brown and faintly sweet from long fermentation; the crust is firm and slightly tangy.
Slice thinly for smoked fish or salted herring with raw onion, layer with butter and dill cucumber, or eat with a wedge of hard cheese and tea. Toasts beautifully on the second and third day.
