What it is
Salmon filet, salt-cured and cold-smoked at low temperature until the fat firms and the flesh dries into chewy, intensely flavoured pieces. Deep ruby colour, smoky-salty, the kind of snack that pairs with a glass of dark beer.
Pull the pieces apart by hand, eat them straight, or shred them into pasta, blinis, scrambled eggs.
