What it is
Suluguni is a semi-hard brine cheese originating in the Samegrelo region of Georgia. Its signature layered, elastic texture comes from a traditional kneading and stretching process — similar in technique to mozzarella, yet entirely its own in flavour. The taste is mild, clean, and pleasantly salty with a slight tang from the brine. It melts beautifully, making it a staple for grilling, frying, or filling khachapuri — though it is just as good sliced straight from the pack.
