What it is
A generous 1.3 kg tub of whole Atlantic herring, cured in a bold spice blend with sea salt. The fish are left to absorb the brine slowly, developing a firm yet tender texture and a layered flavour — salty, gently warm from the spices, with a clean finish. A staple of Eastern European tables, equally at home on a herring platter or alongside boiled potatoes and onion.
Slice the fillets and serve with thinly sliced white onion, a drizzle of sunflower oil, and dark rye bread. Pairs well with sour cream, pickled gherkins, and boiled potatoes.
