What it is
Goldingena is a dry-cured sausage from Gaļas nams Ādaži, a meat producer based in Ādaži, just north of Riga. The name nods to Goldingen, the historic German name for Kuldīga, one of Latvia's most storied medieval towns.
Produced using traditional dry-curing and fermentation in a collagen casing, the sausage is firm-textured with a deep, savoury character. Slice it thinly for a charcuterie board or enjoy straight from the pack with rye bread.
