What it is
Krievijas (Russian-style) is one of the most recognisable semi-hard cheese styles in Eastern Europe. Smiltenes Piens, a dairy from the Vidzeme region of Latvia, produces their Klasiskais version using pasteurised cow's milk and traditional lactic starter cultures. The result is a pale-yellow cheese with small irregular eyes, a smooth elastic texture, and a mild, lightly tangy flavour that deepens with age. At 50% fat in dry matter it slices cleanly and melts evenly.
