What it is

A smoked sausage from Galņas Nams Ādaži, a well-regarded meat house based just outside Riga. Coarsely ground pork is combined with pieces of hard cheese, then smoked over natural wood for a firm, sliceable texture and deep smokiness.

Slice thinly and serve cold on rye bread, or warm briefly so the cheese softens. Works well on a cold cuts board alongside pickles and mustard.

Pork, water, cheese (approx. 8%), salt, spices (black pepper, garlic, nutmeg), dextrose, stabilisers (E450, E452), sodium ascorbate (E301), sodium nitrite (E250). Casing: collagen.
