What it is
Fried sprats in tomato sauce are a staple of Baltic and Eastern European pantries. Small sprats — a close relative of the herring — are fried until golden, then packed in a gently seasoned tomato sauce. The result is a ready-to-eat tin with a soft, full flavour.
Excellent on rye bread, stirred into hot kasha, or served simply as a light main. The tomato sauce is thick enough to spoon, with a mild tang that complements the fish without overpowering it.
