What it is
Polished whole pearl barley — pērļu grūbas in Latvian, перловка in Russian — from the long-running Latvian brand Valdo. Same family as their popular buckwheat range, just packaged in four food-grade boil-in-bag pouches at the larger 125 g size. The "Fine" on the box refers to the cleaner, more uniformly graded kernels — not flour and not cracked yachka.
Pearl barley is a classic foundation grain across the Baltics, Russia and Ukraine: gives the proper chew to a rassolnik pickled-cucumber soup, the bones of a hearty pilaf, or the body of a slow winter porridge. The bag format takes the slow-cook timing out of your hands.
How to cook
Bring a large pot of salted water to a rolling boil — at least 1.5 litres per bag. Drop in 1 bag and simmer uncovered for about 30–40 minutes, until the grain is tender but still has a little bite. Lift each bag out by the paper tab, snip the corner with scissors, and tip the cooked barley straight into your soup pot or a bowl with a knob of butter. To shorten the cook, soak the bag in cold water for 1–2 hours first.
