What it is
Whole brown buckwheat groats — griķi in Latvian, гречка in Russian — from Valdo, a long-standing Latvian grain brand. Same kilned and calibrated grain that's the foundation of porridge, side dishes and stuffed cabbage rolls across the Baltics, Russia, Ukraine and Belarus. Naturally gluten-free, slow-burning energy, deeply nostalgic toasty flavour.
The 1 kg soft pack is the size most home cooks reach for: enough for several family suppers, easy to decant into a kitchen jar.
How to cook
Rinse the grain under cold water. Combine 1 part buckwheat to 2 parts water in a heavy pot, add a pinch of salt, bring to a boil, then cover and simmer on the lowest heat for about 15 minutes, until the water is fully absorbed. Take off the heat and leave covered for 5–10 minutes — this is what makes the grain fluff up properly. Stir in a generous knob of butter and serve.
