What it is

Birds Milk (Ptichye Moloko) is one of the most beloved Soviet-era confections, a tradition that has endured for over sixty years. Each piece in this 200 g gift box is a square of light, airy vanilla-cream soufflé enrobed in a dark chocolate glaze, made to the original recipe by Moscow's Rot Front confectionery.

The texture is the defining characteristic: barely-set soufflé that melts gently on contact, held in place by the contrast of a firm chocolate shell. The vanilla note is clean and direct, not overpowering.

Ingredients

Chocolate glaze (sugar, cocoa mass, cocoa butter, vegetable fat, whole milk powder, emulsifier: soya lecithin E322, vanillin); sugar, butter (milk), glucose syrup, condensed milk (milk, sugar), egg white powder, agar-agar, vanilla flavouring.
