About this product
Summer white mushrooms — Boletus reticulatus, the summer cousin of the classic porcini — have lighter, paler caps and a softer, more delicate flavour than the autumn type. The texture is tender rather than dense, the woodland note quieter.
They're the everyday version of the king mushroom: pour off the marinade, dress lightly with sunflower oil and slivered red onion, and serve as a cold zakuska with potatoes, herring, or dark bread. They also slice well into Olivier and stir into a warm buckwheat without overpowering.
