What it is

“Okorochek” is the affectionate Russian word for a whole chicken leg quarter — thigh and drumstick still joined, the cut grandmothers reach for when the meal needs to be honest and filling. Here that same leg has been slowly stewed on the bone and sealed straight into the tin, with nothing more than salt, a bay leaf and a few peppercorns for company.
