What it is
Chicken hearts slow-cooked in their own juices with a pinch of salt, bay leaf and black pepper, just the way grandmothers used to coax them in a cast iron pot for hours, only already finished for you. The hearts keep that signature firm, slightly springy bite and the deep meaty flavour they are loved for: richer than chicken breast, milder than beef, and free of any liver bitterness. A 400g tin is offal done the patient way, cleanly trimmed and fully cooked, with none of the soaking or prep work.
Pop the lid and serve them warm straight from the tin with buckwheat or mashed potato, finish with soured cream and fried onions, turn into a five-minute gravy, or drop into borscht for extra depth. Cold, they sit beautifully on a slice of rye bread with mustard, or in a salad with pickled onion and boiled egg.
