What it is
Rollmops are a Baltic preserve built on simplicity: sprat fillets are rolled tight, cured in a spiced vinegar brine, then packed in rapeseed oil. These are made from whole Sprattus sprattus fillets — small Baltic sprats selected for even size and a firm, cohesive texture that holds the roll intact.
The flavour is pleasantly tart from the acetic cure, with warmth from whole black pepper, allspice, and bay leaf. They eat well straight from the jar on dark rye, alongside pickled cucumbers, or as part of a cold fish spread.
