What it is
Marrow caviar is one of the most beloved preserved spreads across Eastern Europe and the former Soviet states. Spilva's version is made from tender courgettes (marrow) cooked down with tomato paste, onions, and a touch of sunflower oil until thick and deeply savoury. The result is a versatile, mildly tangy spread that works on rye bread, alongside boiled potatoes, or stirred into soups for extra body. Spilva has been producing condiments and preserves in Riga, Latvia since 1882 — one of the oldest food brands in the Baltics.
