What it is
Germes' Salo Litovskoe (“Lithuanian Salo”) is their best-known product — salt-cured pork backfat, cold-smoked over hardwood until the rind is deep amber and the smoke flavour runs all the way through. On UK shelves you may also see it under Germes' export label “3 Little Pigs”.
Slice paper-thin against the grain. Excellent on dark rye with mustard, with raw onion and a glass of vodka, or chopped fine into hot borshch for smoky depth.
