What it is
Kiaulienos Nugarine is whole pork loin, gently cured and slowly smoked over hardwood in the Lithuanian tradition. The meat is firm and lean, with a thin band of natural fat and a fragrant amber crust from the smoke. Sliced thinly, it shows a rosy interior shading to deeper colour near the edges — the mark of an unhurried smoke rather than a quick injection cure.
Made by Panevezio Mesa (PM), one of the long-established meat houses in northern Lithuania, this loin is a fixture of the Baltic deli counter. Serve it cool, fanned out with dark rye, mustard, pickled cucumber, fresh horseradish, or a glass of beer. It is equally at home on a platter of cold cuts, in an open sandwich for the lunchbox, or diced into a thick potato soup at the end of cooking.
