What it is
"Dumins" is a smoked pork ham from Talsu Gaļa, an established meat house in the small Latvian town of Talsi in northern Kurzeme. Whole pork leg is cured in a mild brine, rested to develop flavour, and then slowly smoked over smouldering alder and beech wood — giving the ham its honey-gold colour, firm but juicy texture and the unmistakably homely woodsmoke aroma the Baltic loves.
It is fully cooked and ready to eat. Slice it thin onto dark rye bread with butter and grainy mustard, lay it on a charcuterie board with pickles and cheese, or use it in sandwiches and salads. No reheating needed — though small cubes also work beautifully in solyanka, pea soup, omelettes or scattered over oven-baked potatoes.
