What it is
Smoked eel fillets are one of the great delicacies of the Baltic and Central European food tradition. The eel — caught in clean, cold waters — is carefully filleted, salted, and smoked over hardwood to develop its distinctive amber colour and rich, slightly sweet flavour.
The flesh is tender and succulent, with a depth of flavour that holds its own alongside black rye bread, a little butter, and a sliver of sharp cheese. Serve as a starter, pile onto open sandwiches, or use as a centrepiece on a sharing platter.
